- 2 Ingredient Pancakes...

Pancake Day has been and gone, but who realistically restricts themselves to pancakes one day a year? I'm guilty of munching my way through a stack pretty frequently, so today I wanted to share with you my quick and easy recipe. This would especially appeal to those who follow gluten or lactose free diets as no flour or milk is involved.

Say whaaat?!

Yep, that's right! I just use two (!) ingredients to make my pancake batter - banana & eggs! This combination forms the perfect mix and means that they're pretty healthy! You're then free to add whatever you wish. I often add desiccated coconut to my batter, raisins are another good option, and then top with greek yoghurt, fruit and a dollop of peanut butter*.

Making the batter couldn't be simpler. Using a fork, mash a banana into a bowl. Once fully mashed, use a whisking method to ensure it's as lump-free as possible (obviously the riper the banana, the better). Then crack 2 eggs into the bowl, continue to whisk thoroughly and ta-da!

OM NOM NOM!

  12. I love these pancakes, although I put baking soda in to make them a bit puffier :) I normally have mine with Nutella and strawberries but Greek yoghurt and peanut butter sounds perfectttt.

  22. Great I'm hungry now, though I had pancakes with strawberry jam this morning for breakfast. Love them, could have them every day. Not so sure on the banana ingredient. Is the flavour too dominant or is it really just to give it a bit of texture? xxx

  25. Yum! These are so easy to make :) I add protein powder to mine and find it binds them a bit better, as my stove/pans are annoying and get too hot/aren't non-stick so I end up with pancake scramble haha!!
